Resep Rempeyek (12 porsi)
Bahan:
275 gr tepung beras
80 gr tepung tapioka
2 butir telur
50 ml santan
20 lembar daun jeruk
1 sdm garam
2 sdt kaldu jamur
½ sdt merica
1 sdm gula pasir
400 ml air
200 gr kacang tanah
60 gr teri nasi
Bahan bumbu halus:
6 siung bawang putih
10 gr kencur
1 ½ sdm ketumbar, sangrai
3 butir kemiri, sangrai
Cara membuat:
1. Buang batang daun jeruk dan iris kemudian cincang kasar kacang tanah dan geprek kemiri
2. Di dalam blender, masukkan kemiri, bawang putih, kencur, ketumbar dan sedikit air dari takaran resep, haluskan
3. Di dalam mangkuk, campurkan tepung beras, tapioka, bumbu halus, telur, santan, garam, kaldu jamur, merica, gula pasir dan air secara perlahan, aduk rata
4. Masukkan kacang tanah, ikan teri dan daun jeruk, aduk rata
5. Panaskan minyak, tuang sedikit adonan kemudian goreng rempeyek di api sedang besar hingga kecokelatan dan kering, tiriskan
6. Rempeyek siap disajikan

Rempeyek Recipe (yield 12 servings)
Ingredients:
275 g rice flour
80 g tapioca flour
2 pc egg
50 ml coconut milk
20 pc kaffir lime leaf
1 tbsp salt
2 tsp mushroom bouillon
½ tsp pepper
1 tbsp sugar
400 ml water
200 g peanut
60 g anchovy, small
Spices:
6 clove garlic
10 g aromatic ginger
1.5 tbsp coriander, toasted
3 pc candlenut, toasted
Steps:
1. Remove the lime leaf stems and slice. Roughly chop the peanut and crush the candlenut.
2. In a blender, add candlenut, garlic, aromatic ginger, coriander, and a little water from the recipe measurement. Blend until smooth.
3. In a bowl, mix rice flour, tapioca flour, blended spices, eggs, coconut milk, salt, mushroom bouillon, pepper, and sugar. Add water gradually. Stir well.
4. Add peanut, anchovy, and lime leaves, then mix well.
5. Heat oil. Pour a small amount of batter, then fry Rempeyek over medium-high heat until golden brown and crispy. Drain.
6. Rempeyek is ready to serve.
