I prefer for the skin to be crisp like this so it tastes even better when we mix it with the Soy Butter Sauce. Hello! Welcome back to my channel, Devina Hermawan. Today, we’ll be making Soy Butter Fried Chicken. It’s definitely many people’s favorite dish. I often cook this at home since it’s delicious and practical. It tastes superb when enjoyed with rice. Here are the ingredients. I’m using bone-in broiler chicken thighs. You can use fillets or rooster, too. When cooking chicken, the marinade is important. I’ll use lime, soy sauce, cornstarch, salt, pepper, MSG. For the Soy Butter Sauce, I’ll use sweet soy sauce. If you want it to be salty and buttery, watch my Ham & Cheese Shrimp Roll video. That one is a Chinese restaurant-style sauce, while this one is homecooked-style sauce. I’ll use garlic, onion, oyster sauce, sweet soy sauce, Worcestershire sauce, margarine or butter, and chili sauce. If you don’t want any spiciness at all, use tomato sauce instead. I’ll chop these upper-lower thigh cuts into 4 parts. Chop it through the bone. When cutting through bone, use the bottom end of the knife as it’ll give you better accuracy when chopping. Usually, it’ll also be more powerful. Finish chopping the rest of the chicken, then transfer it to a bowl or a Ziploc bag. Marinate the chicken with lime… …soy sauce, and seasonings. I use stock powder, but you can also use MSG or skip it. Then, salt, pepper, and cornstarch to tenderize the chicken so it stays moist even after frying. If you use fillets, you still have to marinate them to make them flavorful and tender in texture. Marinate it at room temperature for 30 minutes to 1 hour. To marinate it longer, place it in the fridge. This has been marinated for 30 – 40 minutes. It’s enough as we chopped the chicken into small pieces. Heat the oil on high heat. Once it’s hot, fry the chicken. Continue frying on high heat until they’re crisp. It’s so fragrant now due to the lime and soy sauce. You have to fry it patiently because we want it to be crisp. For the sauce, pound the garlic to infuse the aroma into the dish without scattering the garlic everywhere. If you want a stronger garlic flavor, you can mince it. Slice the onion. Heat some oil. Don’t add the butter or margarine in now because they burn easily. I’ll add a little bit of oil and sauté the garlic until fragrant and crisp to bring out its aroma. Next, add the margarine or butter and the onion in. Sauté only for a moment or the onion will wilt too much. Make sure you use unsalted butter. If you use salted butter, the overall dish may be too salty. Now, add the Worcestershire sauce, oyster sauce, sweet soy sauce, chili sauce or tomato sauce (non-spicy). I’m adding a bit of sugar to bring out the sweetness and a bit of MSG to make it savory. Don’t add too much because we already use oyster sauce. Add the fried chicken in. I’ll add some water to compensate the water that was reduced from cooking. The reduced sauce may become too salty. Then, continue cooking for a moment so the sauce is absorbed better. Now, the Soy Butter Fried Chicken is ready to serve. It’s fragrant and savory, a perfect pair to warm rice. Not only the sauce, the chicken’s texture is also important. We fried the chicken until they’re crisp so when we mix it with the sauce, it’s fragrant and the texture is nice. Also, because we marinated the chicken, it stays moist inside even though the skin is crisp. The lime aroma and the marinade are absorbed well so the chicken is fragrant. Bahan marinasi:
4 pcs paha ayam broiler utuh
1 buah jeruk nipis
1 sdm kecap asin
2 sdm maizena
½ sdt garam

1 sdt kaldu / penyedap
Bahan saus:
3 siung bawang putih, geprek
½ buah bawang bombai, iris
4-5 sdm margarin / mentega
3 sdm kecap kecap inggris
1 sdm saus tiram
2 sdm kecap manis
½ sdm saus sambal / saus tomat
2 sdt gula pasir
½ sdt kaldu ayam
Minyak untuk menumis secukupnya
Air secukupnya
Lainnya:
Jeruk limau
Langkah:
1. Potong ayam masing-masing menjadi 4 bagian lalu marinasi dengan jeruk nipis, kecap asin, kaldu bubuk, garam, dan merica, tutup dengan cling wrap diamkan selama 30 menit di suhu ruang
2. Panaskan minyak, goreng ayam di api besar hingga kering, tiriskan
3. Panaskan sedikit minyak, tumis bawang hingga wangi dan kecokelatan lalu masukkan margarin dan bawang bombai, tumis sebentar
4. Masukkan kecap inggris, saus tiram, kecap manis, saus sambal, gula, dan kaldu ayam, aduk rata
5. Masukkan ayam dan air secukupnya, masak sesaat
6. Ayam goreng mentega siap disajikan

Soy Butter Fried Chicken (yield 4-5 serving)
Marinating ingredients:
4 pc whole broiler chicken thigh
1 pc lime
1 tbsp soy sauce
2 tbsp cornstarch
½ tsp salt
½ tsp pepper
1 tsp stock powder / flavor enhancer
Sauce ingredients:
3 clove garlic, pounded
½ pc onion, sliced
4-5 tbsp margarine / butter
3 tbsp Worcestershire sauce
1 tbsp oyster sauce
2 tbsp sweet soy sauce
½ tbsp chili sauce / tomato sauce
2 tsp sugar
½ tsp chicken powder
Oil to sauté, as needed
Water, as needed
Others:
Kaffir lime
Steps:
1. Chop each of the chicken thighs into 4 parts. Marinate with lime, soy sauce, stock powder, salt, and pepper. Cover with plastic wrap and marinate for 30 minutes at room temperature.
2. Heat the oil and fry the chicken on high heat until crisp. Set aside.
3. Heat some oil. Sauté the garlic until fragrant and browned, then add margarine and onion. Sauté for a moment.
4. Add Worcestershire sauce, oyster sauce, sweet soy sauce, chili sauce, sugar, and stock powder. Stir well.
5. Add the fried chicken and water, as needed. Cook for a moment.
6. Soy Butter Fried Chicken is ready to serve.
